Prepare your taste buds for a happy ending!
If you want to start off your dinner party with a happy ending, feed this climax worthy appetizer to your guests. Do not be surprised while you are finishing up prepping dinner if you hear deep guttural moans of pleasure and the buckling of knees coming from the next room.
This is without a doubt one of my best food porn creations in my portfolio so far. The rich sweetness of the roasted peaches paired with the savory prosciutto and velvety camembert are an orgasm in your mouth. So go ahead. Start your night off with a happy ending and see how the rest of the evening heats up.
INGREDIENTS
14 oz camembert (2 wheels)
6 semi-ripe peaches, pitted & sliced
8 oz sliced-thin prosciutto
3 tbsp unsalted butter, melted
2 tbsp Barr Hill Raw Honey
1 tsp vanilla extract
½ tsp ground cinnamon
¼ tsp ground nutmeg
Honey for drizzling
Crostini or sturdy crackers for serving
METHOD
Set an oven rack in the middle of the oven and preheat to 425°F. Line a large rimmed baking sheet with parchment paper. Set aside.
Slice the peaches in half and remove and discard the pits. Slice each half into four slices. Place in a large mixing bowl and set aside.
In a small heat safe bowl, melt the butter in microwave for 30 seconds at a time until it is completely melted. Add the honey, cinnamon, and nutmeg and mix until well combined.
Pour the mixture over the peaches and gently toss until completely coated.
Transfer the peaches to the prepared baking sheet and arrange in a single later leaving a little room between each slice. Bake for 10 to 15 minutes or until the peaches are tender and caramelized, flipping halfway through.
Remove from heat, set aside, and allow to cool completely.
Preheat oven to 350°F.
Cut the camembert wheels in half so you have 4 rounds. Cut the prosciutto into small bite-size pieces.
Place a round cut side up in the middle of a shallow baking dish that is slightly larger than the camembert. Arrange the roasted peaches and prosciutto in a small concentric circle and lightly drizzle with honey. Repeat with the remaining ingredients. With the remaining peaches and prosciutto, place around the camembert to fill the bottom of the baking dish.
Bake for 10 to 15 minutes until the cheese is just beginning to melt. Remove from heat, drizzle with more honey, and serve immediately with crostini or crackers. Enjoy!
