Heart Healthy Almond Rice Crispy Treats

Whether it is Valentine’s Day or just a random tasty Tuesday, you and your hubby can enjoy this quick and easy heart conscious recipe. Unlike traditional rice crispy treats, these do not use marshmallows as the binding agent. Instead, a mix of almond butter, maple syrup, and honey keep these tasty sweets stuck together like glue, just like you and your special someone 🥰


INGREDIENTS

6-1/2 cups crispy rice cereal

1/2 cup dried cranberries

1 cup creamy almond butter

1/4 cup maple syrup

1/4 cup honey

2 tbsp unsalted butter

1 tsp vanilla or almond extract

1/2 tsp cinnamon

1/4 tsp nutmeg



METHOD

  1. Lightly coat a 13x9-inch baking pan with nonstick cooking spray.

  2. In a large mixing bowl, combine the crispy rice cereal and dried cranberries. Set aside.

  3. In a microwave-safe bowl, combine the almond butter, maple syrup, honey, vanilla or almond extract, and butter. Microwave in 15-second increments for 1 to 1-1/2 minutes, stirring after each 15 seconds until melted and smooth. Add the cinnamon and nutmeg and stir until well combined.

  4. Pour the almond butter mixture over the crispy rice cereal mixture. Stir to coat the cereal and cranberries using a spatula. Transfer the mixture to the prepared baking dish and press into an even layer. Cover with plastic wrap and place in the freezer for at least 2 hours.

  5. Using a cookie cutter shape of your choice, cut out the treats. Transfer to an airtight container or serving dish, cover, and keep refrigerated until ready to serve.
